"Mara dei Boschi" is a multidisciplinary working group creating innovative and high-quality offerings in its 2 laboratories.
The ice-cream lab aims at preserving flavours in all their natural perfection, adding only a minimum of the required sugar and fat.
The chocolate lab performs 2 task: it creates limited edition chocolate products (by collaborating with artists, designers and fashion creators) and works on more classic products, selecting so-called "rares" cocoa beans from around the world.
The best pairing is chocolate and coffee: "giandujotto" without milk or "gianduja" cream combined with a cup of Brazil single-origin coffee.
Dark chocolate bars go well with liqueurs such as genepy or with a scoop of ice-cream with hot coffee poured on top to make an excellent "affogato".
