In a tiny hamlet of Cellio, located in the Valsesia mountains (province of Vercelli), operates a micro craft brewery born in 2005.
"Vellecellio" beers are made from pure rich water coming directly from the Monte Rosa glaciers, which sets the high quality of the final product.
But water is not enough for this brewery. It is important to underline the link with the territory by using raw materials typical of the area such as dry chestnuts from the surrounding woods, thyme from Alta Valsesia and, needless to say, the world-famous local rice cultivations, in particular the "Arborio" and "Baraggia" varieties.
These ingredients, so representative of the area, are the key elements of "Vallecellio" beers, alongside classic barley malt and hops.
With its unmistakable flavour and aroma, "Chestnut Beer" is excellent with cured meats such as "cotechino" (pork sausage) or "lardo alle erbe" (lard with herbs).
"Rice Beer", produced with the addition of "Arborio" rice, is perfect as an aperitif with peanuts and salted almonds.
