"Santa Clelia" winery was established in the mid 70s in Rossana di Mazzè and has always been dedicated exclusively to the cultivation of vines and the production of local traditional wines.
Paying great attention to nature and the environment, the company has converted entirely converted to organic agriculture in recent years, both in vineyard and cellar practices.
"Santa Clelia" works on 8 hectares of vineyards, cultivating mainly "Erbaluce", at an altitude of 300 metres.
The "Erbaluce" grape variety is used to produce still white DOCG wines, "Spumante" and "Passito", the most traditionally recognised and appreciated versions.
"Barbera", "Freisa" and "Nebbiolo" grapes are used to produce "Canavese" and "Carema" wines.
The company produces also a grappa from "Erbaluce" pomace, that after a short period of conservation from the harvest, is distilled in alembic with extraction at about 77° alc./vol.
You can drink "Erbaluce di Caluso" dry on its own, allowing it to shine as the protagonist of a convivial moment, but it brings out its best qualities when paired with slightly refined white meat dishes or fish.
Instead, "Erbaluce di Caluso Passito" is perfect with ripe blue cheese like Roquefort and Gorgonzola, patès and foie gras.
