Meet the producer

Caseificio Vincenzo Quaglia is a local producer with a rich history and a commitment to excellence. Its story began in the early 1900s when a shepherd settled in Scarnafigi and started working with local milk.

Today, the company is known for its exceptional cheeses, including Grana Padano DOP, Bra Tenero and Duro, Toma Piemontese, and Raschera. With a dedication to traditional methods, refined with the help of a Lombard cheesemaker, their products boast exquisite flavor and quality.

The commitment to excellence is recognized by their membership in the Consorzio di tutela del formaggio Grana Padano and as founders of other consortia. With over a century of experience, Caseificio Vincenzo Quaglia's passion drives them to create cheeses that consistently surpass expectations.

The perfect match

Caseificio Vincenzo Quaglia presents an array of cheeses to delight the palate: Bra Duro is aged for at least six months and offers a nutty taste, harmonizing beautifully with honey, walnuts, and a full-bodied red wine.

Bra Tenero has a creamier, milder profile, finding its match in pears, apples, dried fruits, and crisp white wines.

The herb-infused softness of Caciotta alle Erbe pairs seamlessly with crackers, olives, and a light red wine, while the robust Carlomagno is best savored standalone or atop bread with a dash of olive oil.

Fior del Malgaro, with its delicate sweetness, aligns well with cured meats, fresh vegetables, and light white wines.

Fontal Nazionale’s mild essence is accentuated with apples, dried apricots, nuts, and fruity white wines.

Grana Padano Dop, a hard cheese with a subtle nuttiness, is ideal over pasta, risotto, and salads, and complements medium to full-bodied red wines.

Nostrale Tenero, a soft cheese with a sweet touch, goes hand-in-hand with honey, pears, and a light red wine.

Raschera’s gentle sweetness finds company in figs, dried apricots, and a medium-bodied red wine.

Sola, with its pronounced intensity, partners well with cured meats, nuts, and a full-bodied red wine.

Toma Piemontese, a semi-soft cheese exuding a buttery charm, is perfect with pears, figs, and a light red wine.

Lastly, Tüma ‘d Censü’s sweet and delicate nature is beautifully contrasted with fresh vegetables, sliced meats, and a refreshing light white wine.
