Upholding ancient traditions, they master the art of chestnut drying in their historic stone and wood dryer, meticulously restored in 2018. Marco Bozzolo’s farm excels in overseeing every phase of production, from cultivation to crafting exquisite confections with local artisans. Fresh Chestnuts: Roasting fresh chestnuts is the best way to consume them, accentuating their natural sweetness and nuttiness. Slice a cross on the flat side before roasting to prevent bursting and make peeling easier. Fresh chestnuts have a sweet, nutty flavor that's elevated when roasted. They pair wonderfully with light-bodied, fruity red wines like Beaujolais, complementing their earthiness and sweetness. The natural sweetness of fresh, roasted chestnuts also goes excellent with creamy hot chocolate, which can complement their earthiness while the warmth enhances their comforting qualities.

Dried chestnuts: Dried chestnuts can be rehydrated and used in stews or stuffing, offering a sweet and chewy texture that complements savory dishes. They can also be ground into flour for baking. Due to their softer tannic profile, dried chestnuts' concentrated sweetness and chewy texture pair well with medium-bodied red wines like Merlot. They can also be enjoyed with a robust coffee like a dark roast or espresso. The coffee's bitterness effectively offsets the sweet, chewy nature of the dried chestnuts.

Chestnut Flour: Ideal for gluten-free baking. Use this flour to create rich, nutty bread, cakes, or crepes. Its unique flavor adds depth to traditional baked goods and pasta. Try chestnut flour recipes with a cup of hot spiced cider. The naturally sweet and fruity notes of the cider complement the earthy flavors of the chestnut flour, especially in autumn-inspired dishes.

Chestnut Honey: Due to its intense and slightly bitter flavor, chestnut honey pairs well with robust cheeses, can be drizzled over oatmeal or yogurt, or used in baking to impart complex flavors to sweets and bread. Chestnut honey's intense and slightly bitter note pairs exquisitely with gorgonzola cheese.
