Established in 1914 in Cameri, within the renowned Novara province, "Latteria Sociale di Cameri" is a cooperative dairy that has been crafting traditional Italian cheeses for over a century.
Founded by local farmers aiming to process their milk independently, the dairy has grown to include 19 member farms, collectively producing approximately 37 tons of high-quality milk daily.
This commitment to quality and tradition is evident in their artisanal production methods and dedication to preserving the authentic flavors of their cheeses.
"Latteria Sociale di Cameri" is renowned for the production of Gorgonzola DOP (dolce, piccante and blu), but the company catalogue is enriched by other famous local cheeses such as Toma Piemontese DOP and Taleggio DOP, together with a selection of goat milk cheeses.
Gorgonzola Dolce DOP: This sweet, creamy blue cheese pairs beautifully with crusty bread drizzled with acacia honey or fig jam, balancing its richness with sweetness. Add to a pear and walnut salad for a luxurious touch. A glass of Erbaluce di Caluso DOCG with its crisp acidity or Moscato d’Asti with its delicate sweetness complements the creamy texture.
Gorgonzola Piccante DOP: The bold, piquant flavor of this aged blue cheese is enhanced by dried apricots or dates and roasted almonds. Use it in a radicchio risotto or drizzle with chestnut honey for a sophisticated contrast. Pair with a structured red like Caretto Oro Rosso or a sweet Port for a classic blue cheese combination.
Taleggio DOP: This aromatic, washed-rind cheese melts beautifully over polenta or pairs well with roasted vegetables like caramelized squash and onions. A side of balsamic-glazed figs adds sweetness to its savory profile. Canavese Rosso DOC with its earthy red fruit notes or a dry Riesling creates a balanced pairing.
Toma Piemontese DOP: Younger Toma pairs well with fresh tomatoes, basil, and olive oil, while aged Toma shines with truffle-infused honey or thin slices of prosciutto. Nòssi Ràis offers a robust complement to the cheese’s complexity, while L'Obi provides a lighter match for its younger form.
Toma Blu: This mild blue-veined cheese pairs well with roasted pears, walnuts, and rye bread for a rustic presentation. Its creaminess is balanced by the bright acidity of Alta Langa Blanc de Noir DOCG, creating a harmonious pairing.
Verdalpe: The delicate, creamy profile of this goat’s milk blue cheese is elevated by fresh apple slices and lavender honey or crumbled over a citrus-dressed green salad. Pair it with Erbaluce di Caluso Spumante DOCG, whose effervescence refreshes the palate.
Mattonella di Capra: This mild, smooth goat cheese is excellent on crackers or toast with apricot preserves or fresh herbs. Add it to a mezze platter with olives and roasted peppers, and enjoy it with Canavese Rosato DOC for a fruity, refreshing pairing.
Toma di Capra: Younger Toma pairs well with honey and almonds, while aged Toma shines alongside caramelized onion chutney on whole-grain bread. Pinot Nero with its red berry notes complements the cheese’s tangy, evolving flavor.
Blu di Capra: The creamy, tangy flavor of this blue-veined goat cheese pairs perfectly with dried figs, candied pecans, or dark chocolate. Add quince paste to a cheeseboard for a sweet-savory touch, and enjoy it with Caluso Passito DOCG or Caretto Oro Rosso.
Nivellina: The luxurious blend of Gorgonzola and Mascarpone is delightful with toasted hazelnuts and fresh baguette or as a decadent pasta filling. Serve with poached pears for dessert, complemented by Moscato d’Asti or sparkling Erbaluce di Caluso DOCG.
